This Arugula Salad with pears, walnuts, and prosciutto is one of the tastiest salads I’ve ever created. And it’s birth came from combining was left in the kitchen.
I love the sweet (pear) with the salty (prosciutto) and topping it with a Lemon Oil dressing.
What’s great is the ability to mix up the ingredients, apple for pear, or change the quantities.
Yield 1 Serving
- A handful of Arugula
- Half a pear, diced
- 1/4C Walnut pieces
- 2 slices, torn, prosciutto
- 1 Tbsp Olive Oil
- 1 Tsp Lemon Juice
- In a serving bowl, drizzle the arugula with the oil and lemon juice.
- Top with pear, walnuts and prosciutto.
